Layered casserole using fresh zucchini, red peppers, sun dried tomatoes, artichokes, and cheese!

Recipe Ingredients for Zucchini Casserole

1 large red bell pepper, chopped
3 zucchini, peeled, salted, boiled and drained
8 ounce light ricotta cheese
8 oz sun dried tomatoes
8 oz shredded parmesan cheese
1 cup 1% milk
32 oz artichoke hearts, drained
8 oz fresh mozzerella cheese
1 tbsp garlic powder
2 tsp sea salt

Recipe Directions for Zucchini Casserole

  1. Preheat oven to 375 degrees and lightly grease casserole dish.

  2. Peel and chop zucchini, combine with half the sun dried tomatoes (diced) and add to salted boiling water. Cook for 3-4 minutes and drain.

  3. In a blender, combine the red bell pepper, remaining sun dried tomatoes, half of the parmesan cheese, milk, 1 can of artichoke hearts (drained), salt, and garlic powder. Process until a chunky sauce forms.

  4. Place a layer of the zucchini mixture in the bottom of the casserole dish. Top with a layer of the red pepper/sun dried tomatoe mixture. Next, layer with the ricotta cheese and then repeat the zuicchini and red pepper mixture layers. Top with final can of artichoke hearts (quartered), parmesan cheese, and slice mozzerella cheese.

  5. Bake for 30 minutes or until cheese on top is melted and lightly browned.
