Recipe Ingredients for Zucchini Casserole

6 cups zucchini, sliced
1/4 cup onion, chopped
1 can cream of mushroom soup
1 cup mushrooms, sliced (canned)
1 cup light sour cream
1 cup carrots, shredded
1 cup seasoned bread crumbs
1 egg

Recipe Directions for Zucchini Casserole

  1. sautee the zucchini slices and onion for 4 min, or just till they are half cooked.

  2. combine all vegetables in shallow baking dish

  3. mix eggs, sour cream, soup and half of bread crumbs. pure mixture over vegetables

  4. pour remaining breadcrumbs over dish

  5. bake at 400 for 30 minutes or until heated through
