large onion diced, garlic, 3 lbs plum tomatoes rough chopped, 4 lbs zucchini sliced, 1 lb mozz cheese

1 large Onions
64 oz Squash, Summer, Zucchini, Includes Skin
452 4/5 grams Mozzarella, Part Skim Milk Cheese

Recipe Directions for Zucchini casserole

  1. saute onions garlic and tomatoes in splash of olive oil...when liquid is cooked out layer sliced zucchini with tomato mixture and cheese...3 -4 layers (9x13 pan)

  2. do not put cheese on top layer yet...bake at 350 for 25 minutes then add last cup of cheese and bake until browned
