Zucchini Casserole - Vegetarian

Recipe Ingredients for Zucchini Casserole

2 cup, chopped Squash, Summer, Zucchini, Includes Skin
6 oz Carrots
4 oz Onion
1 1/4 cup Cream of Chicken Soup
4 oz Light Sour Cream
6 serving Chicken Stuffing Mix
1/3 cup Butter

Recipe Directions for Zucchini Casserole

  1. Lightly cook and drain squash.

  2. Mix stuffing with butter.

  3. Mix all ingredients with 1/2 of the stuffing mixture.

  4. Put in casserole dish and top of with remaining stuffing.

  5. Bake 25 minutes at 350 degrees.
