Tasty, healthy way to use summer squash

Recipe Ingredients for Zucchini casserole

6 cup, chopped Squash, Summer, Zucchini, Includes Skin
2 cup Baby Crookneck Squash
2 cup, chopped Onions
1 tbsp Olive Oil
2 cup Fat Free Plain
1 cup Reduced Fat 4 Cheese Mexican Shredded Cheese
3 tsp California Style Minced Garlic made from Fresh Garlic

Recipe Directions for Zucchini casserole

Dice squash, and saute in pan with olive oil, garlic and onions until tender. Drain most of the excess liquid. Mix in yogurt. Spread small amount of flour in the bottom of a casserole dish, and layer squash with shredded cheese. Heat through in microwave or oven to melt cheese.
