Recipe Ingredients for Zucchini Carrot Muffins

1 3/4 cup rolled oats
1 cup whole wheat flour(or regular)
1/2 cup granulated sugar
1 tbsp baking powder
1/4 tsp nutmeg
1 1/3 cup carrots, grated
1 cup zucchini, grated and unpeeled
2/3 cup soy milk(or skim)
3 tbsp fat free sour cream
2 egg whites, whipped

Recipe Directions for Zucchini Carrot Muffins

  1. Preheat oven to 350.

  2. Combine oats, flour, sugar, baking powder and nutmeg in a bowl.

  3. In another bowl combine carrots, zucchini, milk, sour cream and eggs.

  4. Mix ingrediants together until mix is just moist.

  5. Bake 20-25 minutes.
