Closely based a recipe "That British Lady" at http://thatbritishwoman.blogspot.com/2008/07/zucchini-carrot-muffins.html. Minor changes in an attempt to make it healthier and to match my famlies tastes. We like it! The recipe makes 24 small muffins, or 18 'normal' size ones. If you choose to make 18, remember to adjust the calorie count :-). By the way, I used 1% milk in the recipe because that is what I had in the house. I grow my own Zucchini, grate it, and freeze in 2 cup quantities. When you thaw it, it is a little wet. Do not discard the liquid. If you grate fresh it is very wet. I squeeze out some of this liquid before freezing, and before using it in this recipe when using fresh zucchini. NOTE: 3 grams lite salt is 1/2 a tsp. Good luck!!

Recipe Ingredients for Zucchini Carrot Muffins

2 cups whole wheat flour
2 cups flour
5 teaspoons Baking Powder
1 teaspoon baking soda
2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 tsp cloves
1/2 tsp powdered ginger
3 grams lite salt
3 tbsp milled flax seed
1 cup brown sugar
2 eggs
3 tbsp melted unsalted butter
1/2 cup unsweetened applesauce
3/4 cup milk
2 teaspoon vanilla
2 cups shredded zucchini
2 cups shredded carrots

Recipe Directions for Zucchini Carrot Muffins

  1. Preheat oven to 350 degrees (fahrenheit).

  2. Put all dry ingredients except brown sugar in a large bowl and mix well.

  3. Add brown sugar, mix again.

  4. In a second bowl, beat eggs, then add all remaining wet ingredients. Mix well.

  5. Lightly grease muffin pans for 24 muffins.

  6. Now, mix wet and dry ingredients until combined, but not too much.

  7. Put the mixture in the pan, and bake for 25 to 30 minutes.
