Recipe Ingredients for Zucchini and Carrot muffins

1 cup unbleached white flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup of sugar
1/4 cup splenda sugar substitute
3 large egg whites
1/4 cup canola oil
1/4 cup unsweetened apple sauce
1 apple
1/2 cup zucchini
1/2 cup carrots
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger

Recipe Directions for Zucchini and Carrot muffins

  1. Preheat the oven to 350 degrees and grease a full muffin tin.

  2. IN a bowl, mix the flour, baking soda and powder, and salt.

  3. In another bowl, whisk together the sugars, eggs, oil, apple sauce and apple for 2 minutes.

  4. Slowly fold the dry ingredients into the wet ingredients and then divide the batter into two bowls. Add the carrots and cinnamon to one bowl and zucchini, nutmeg, and ginger to the other. Combine well.

  5. Divide the muffin mixtures among the tins, sprinkle with remaining sugar and bake until golden brown, about 20 minutes.
