Recipe Ingredients for Zucchini Carrot Bread

1 cup Splenda No calorie
1 cup sugar
3/4 cup safflower oil
1/2 cup unsweetened applesauce
3 large eggs
2 tsp vanilla extract
1 cup zucchini, shredded
1 cup carrots, shredded
1 cup whole wheat flour
1 cup white flour
1 1/4 cup cake flour
1/2 cup orange juice
2 tablespoons orange juice
2 tsp baking soda
1/4 tsp baking powder
1 tsp salt
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/2 cup raisins
3/4 cup pecans, chopped

Recipe Directions for Zucchini Carrot Bread

Beat eggs until light and fluffy. Add sugar. Then add oil and applesauce and vanilla. Combine dry ingredients. Add to egg mixture, alternating with zucchini and carrots. Stir in raisins and nuts. Spray pans and add batter. bake at 350 for about 35 to 40 minutes or until done.
