Zucchini-Carrot bread made with whole wheat flour and All-Bran (original recipe).

Recipe Ingredients for Zucchini-Carrot Bread (Homemade)

3 eggs
1 cup vegetable oil
1 1/2 cups brown sugar, packed
1 cup grated zucchini
1 cup grated carrots
2 teaspoons vanilla extract
2 1/2 cups whole wheat flour
1/2 cup All-Bran
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons ground cinnamon
1 cup (4 oz.) sliced natural almonds

Recipe Directions for Zucchini-Carrot Bread (Homemade)

  1. 1. Preheat oven to 350F. Grease* and flour one 9 x 5 x 3 - inch loaf pan, two 7 x 3 x 2 - inch loaf pans, or four 5 x 3 x 21/8 - inch loaf pans.

  2. 2. In large mixing bowl, beat eggs with oil. Stir in sugar, zucchini, carrots, and vanilla.

  3. 3. Mix together flour, All-Bran, salt, baking soda, and cinnamon. Stir into zucchini mixture. Add almonds and mix well.

  4. 4. Bake for about 1 hours (large pan), 1 hour (two medium-sized pans), or 35-40 minutes (four small pans) ? or until a pick inserted in center comes out dry.

  5. 5. Allow to cool for 15 minutes in pan; then invert and cool on wire rack. Wrap well to store. (This bread stays moist for several days. It also freezes well.)
