Recipe Ingredients for Zucchini Carrot Bread (diabetic)

1 tsp No Calorie Sweetener
1.5 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
2 tsp Baking Soda
2 Teaspoon Baking Powder
1/4 tsp Sodium-Free Salt
0.25 tsp Ginger, Ground
1 large Egg, Whole
0.5 cup Vegetable Oil, Canola
0.33 small Squash, Summer, Zucchini, Includes Skin
2 small (5-1/2" long) Carrots
1/4 cup Chopped Walnuts
1 miniature box (.5 oz) Raisins, Seedless

Recipe Directions for Zucchini Carrot Bread (diabetic)

in large mixing bowl stir together flour,sweetner, baking powder, baking soda, salt and ginger. set aside. In midum bowl, beat egg, add oil, grated zucchini and carrots. Mix well. Add zucchini nuts and nuts to flour mixture. stir only unitl all the flour is incorporated. Do not over mix. Scrape batter into well greased 9-inch bread pan and bake at 375 for 50 minutes. Remove from oven and let set for 5 minutes, then turn onto rack.
