Zucchini "pan" cakes, great as an appetizer or side, or just as a low cal snack!

Recipe Ingredients for Zucchini Cakes

5 cups zucchini
3/4 tsp salt
4 eggs
1 clove garlic
3/4 cup flour
1/2 cup Parmesan cheese
1 tbsp onion
1/4 tsp black pepper

Recipe Directions for Zucchini Cakes

  1. Shred 5 cups zucchini.

  2. Mix with salt

  3. Place in colander in sink. Add a heavy bowl full of cans on top to drain the water off for minimum 15 minutes.

  4. Beat eggs and garlic until frothy.

  5. Add in flour, cheese, onion and pepper to moisten.

  6. Mix in zucchini.

  7. Cook on lightly oiled griddle at medium heat, 3 minutes per side. Use 1 tbsp per cake and flatten with spoon.

  8. Serve plain or with dipping sauces. Can substitute for a bread side at dinner
