Recipe Ingredients for Zucchini Cake

2 c flour
2 tsp cinnamon
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
3 eggs
1 c sugar
8 oz Splenda no calorie
1 c apple sauce
1 tsp vanilla extract
1 tsp lemon zest, grated
2 c zucchini, grated
1/2 c golden raisins

Recipe Directions for Zucchini Cake

  1. In medium bowl, stir together flour, cinnamon, baking soda, salt, and baking powder. Set aside.

  2. Beat 3 eggs on high speed of mixer until foamy.

  3. Lower speed and add sugar, Splenda, applesauce, vanilla, and lemon zest.

  4. Stir in flour mixture, a little at a time.

  5. Stir in the zucchini and raisins.

  6. Pour mixture into greased and floured sheet cake pan (or greased and floured tube pan)

  7. Bake at 350 for 40 to 45 minutes (1 hr)
