Recipe Ingredients for Zucchini Cake II

3 cups shredded zucchini
1 1/2 cups sugar
3 eggs, beaten
1 tbs. vanilla
1/2 cup vegetable oil
3/4 cup flaxseed meal
1 1/2 cups unbleached flour
1 1/2 cups whole wheat flour
1 tsp. nutmeg
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 1/4 tsp. baking powder

Recipe Directions for Zucchini Cake II

  1. Mix/sift dry ingredients together:

  2. Flour, nutmeg, cinnamon, salt, baking soda, baking powder

  3. In large bowl, beat eggs together. Add sugar and vanilla, mix. Add oil and zucchini, mix. Slowly add flour mixture. Beat about 4 minutes until smooth. Pour into well-greased Bundt pan.

  4. Bake at 325 for 1 hour 15 minutes (until toothpick comes out clean). Let stand for 15 minutes, and then turn onto plate.
