Vegan Brownies - very moist & delish

Recipe Ingredients for Zucchini Brownies (vegan)

2 c zucchini
3/4 c olive oil
1 1/2 c turbinado sugar
2 c flour
1/2 c cocoa
1 1/4 tsp baking soda
1 tsp salt
2 tsp vanilla

Recipe Directions for Zucchini Brownies (vegan)

Shred zucchini; add salt & let sit while you get other ingredients ready. Mix oil, sugar, & vanilla & beat until creamy. Mix dry ingredients together: add oil & sugar mixture & then add zucchini. Bake in a greased 9x13 pan @ 350 degrees for 25 minutes. Let cool 30 minutes then cut into 18 pieces and serve.
