Recipe Ingredients for Zucchini Brownies

3 square (1 oz) Baking Chocolate, Unsweetened, Squares
3 large egg Eggland's Best Egg
2 cup Sugars, Granulated
1 cup Vegetable Oil, Canola
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 tsp Vanilla Extract
2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1 tsp Baking Soda
5 grams Coarse Kosher Salt
1.5 tsp Cinnamon, Ground
1 cup Chocolate Chips Semi-Sweet

Recipe Directions for Zucchini Brownies

  1. Preheat convection oven to 400 (regular oven to 375) degrees F. Lightly grease one 13x9 glass pan.

  2. In a microwave-safe bowl, microwave baking chocolate until melted. Stir occasionally until chocolate is smooth.

  3. In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well.

  4. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared pans.

  5. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
