Vegan Zucchini Bread - light, fluffy, freezes well.

Recipe Ingredients for Zucchini Bread - Vegan

3 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon baking powder
1 cup applesauce, unsweetened
1 cup white sugar
1 cup brown sugar
3/4 cup vegetable oil
2 teaspoons vanilla extract
3 cups zucchini, shredded
2/3 cups raisins, golden
1/3 cups, cranberries, sweetened, dried
1/3 cups walnut, pieces

Recipe Directions for Zucchini Bread - Vegan

  1. Mix flour, salt, baking soda,cinnamon and baking powder and set aside.

  2. In separate bowl, mix applesauce, both sugars, oil, and extract.

  3. Wisk with electric mixer.

  4. And zucchini, raisins, cranberries and nuts.

  5. Fold in the flour mixture.

  6. Use (2) 9 x 5 loaf pans or (4) 3 x 5 mini pans. Grease and flour the pans.

  7. Bake in preheated oven 325 degrees for approx. 70 minutes.

  8. Cool bread in pans for 10 minutes before removing to wire rack.
