Makes one 10-inch cylindrical loaf.

Recipe Ingredients for Zucchini Bread - TimeLife Books

5 cups flour
1/2 oz. yeast
4 cups zucchini
2 tbsp salt
1 3/20 cups water

Recipe Directions for Zucchini Bread - TimeLife Books

  1. Grate and drain zucchini (salted, squeezed dry).

  2. Mix yeast with 1/2 cup tepid water.

  3. Mix zucchini, the yeast and the flour in a large bowl.

  4. Add enough tepid water to form a smooth, firm dough.

  5. Knead the dough well for 10 minutes.

  6. Return to the bowl, cover, and let rise for 1.5 hours (until doubled in bulk).

  7. Knead the dough into a loos round, then shape it into a tapered, cylindrical loaf.

  8. Lay loaf on a buttered baking sheet.

  9. Cover with a towel and let it rise in a warm place for 56 minutes, until doubled in bulk.

  10. Brush the loaf with olive oil to prevent exposed zucchini from burning.

  11. Bake in preheated 425 degree oven for 40 to 45 minutes, until the bottom sounds hollow when rapped.

  12. Cool the loaf on a wire rack.
