Recipe Ingredients for Zucchini Bread

3 eggs
48 packet splenda no calorie sweetener
1 cup unsweetened applesauce
2 cups zucchini
1 tsp. vanilla
2 cups flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. baking powder

Recipe Directions for Zucchini Bread

  1. Combine and beat together 3 eggs, slightly beaten, 2 cups splenda*, 1 cup applesauce, 2 cups zucchini, grated, 1 tsp. vanilla.

  2. Sift together 3 cups flour, 1 tsp. salt, 1 tsp. soda, 2 tsps. cinnamon, 1/4 tsp. nutmeg, 1/2 tsp. baking powder.

  3. Add dry ingredients to egg mixture and stir well.

  4. Pour into 2 well-grease loaf pans.

  5. Bake 1 hour at 325 degrees.

  6. *48 packets splenda = 2 cups
