Recipe Ingredients for Zucchini Bread

3 cup Gold Medal Whole Wheat Flour
1 teaspoon Baking Powder
1 tsp Cinnamon, Ground
1/2 tsp Sea Salt
1/4 tsp Baking Soda
1/2 cup Original
1/2 cup Natural Classic Flavors
2 tsp Vanilla Extract
1 extra large Egg, Whole
3/4 cup Sugars, Granulated
6 oz SPLENDA Sugar Blend for Baking
1 large Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Zucchini Bread

  1. Preheat oven to 350. Coat pans with cooking spray, set aside.

  2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, cinnamon, salt, and baking soda in a large bowl.

  3. Combine egg substitute, oil, lemon rind, vanilla, and egg in a large bowl; add sugar, stirring until combined. Add zucchini; stir until well combined. Add flour mixture; stir just until combined. Stir in walnuts.

  4. Divide batter evenly between 2 (8 x 4-inch) loaf pans. Bake at 350 for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pans on a wire rack; remove from pans. Cool completely on wire rack.
