Recipe Ingredients for Zucchini Bread

3 eggs
1/2 cup vegetable oil
1/2 cup applesauce
1 3/4 cups sugar
3 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt

Recipe Directions for Zucchini Bread

  1. Beat eggs

  2. Mix in oil and sugar

  3. Add Zucchini and vanilla

  4. Mix dry ingredients together

  5. Add to wet ingredients

  6. Bake in oiled & floured loaf pans or 24 muffin tins at 350 for 60-70 min (for loaves) or 25-35 min (for muffins).

  7. Can add nuts (.5 cup) or dried fruit or choc chips (1 cup).
