Recipe Ingredients for Zucchini bread

1 1/3 cups flour, whole wheat
2/3 cup oatmeal
1/2 cup sugar
1 tbsp dry milk, 2%
2 tsp baking powder
1/2 tsp cinnamon
1 tsp baking soda
1 cup yogurt, low fat
3 egg whites
1 zucchini, medium

Recipe Directions for Zucchini bread

  1. Heat the oven to 425. Lightly grease a 9x5 inch loaf pan with nonstick spray.

  2. In a mixing bowl, whisk together the flour, oat bran, sugar, dry milk, baking powerd, cinnamon, and baking soda.

  3. In a separate bowl, blend together the yoghurt, egg whites and zucchini (finely shredded and peeled).

  4. Stir the wet ingredients into the dry only until moistened, taking care not to overbeat, about 30 seconds.

  5. Pour into the loaf pan. Bake until a toothpick inserted in the center of the loaf comes out clean, about 40 minutes.
