Makes 10 servings



Low fat zucchini bread. Variations: use shredded carrots instead of zucchini, add walnuts and/or raisins, add 1 tsp vanilla extract.

Recipe Ingredients for Zucchini Bread

1/2 cup sugar
3/4 cup applesauce
1 1/2 cups whole wheat flour (WW pastry flour)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
2 medium zucchinis, shredded (to equal 1 cup)
2 eggs

Recipe Directions for Zucchini Bread

Mix all ingredients together in a small mixing bowl and pour into a greased and floured loaf pan. Bake at 350 degrees for 35 minutes or until a toothpick comes out clean.
