Recipe Ingredients for Zucchini Bread

3 cups grated zucchini, with peel
1 1/2 cup oil
3 cups sugar
4 eggs
3 cups flour
1 1/2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp salt

Recipe Directions for Zucchini Bread

  1. Preheat oven to 350.

  2. Mix together zucchini, oil, sugar, eggs. Set aside.

  3. Sift together flour, baking powder, baking soda, cinnamon, salt. Add to zucchini mixture.

  4. Divide batter in three. To one, add 1 cup mini chocolate chips. To another, add one cup crushed pineapple (undrained). To a third, leave plain or add 1 cup chopped nuts.

  5. Pour into greased loaf pans. Bake at 350 for 1 hour and 10-15 minutes. Baking time varies greatly. Start checking at 55 minutes, using the toothpick test.
