from sugarcrafter.net. Original recipe called for 1 cup oil and I replaced it with apple sauce instead to lower fat and calories. I hope it turns out!

Recipe Ingredients for Zucchini Bread

3 cups flour
1 1/2 cups sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp salt
1 tsp baking powder
3/4 tsp baking soda
3 eggs
1 cup unsweetened applesauce
2 cups shredded zucchini

Recipe Directions for Zucchini Bread

  1. Preheat the oven to 350 degrees. In a large bowl, stir together flour, sugar, cinnamon, salt, baking powder, and baking soda.

  2. In a small bowl, beat the eggs, applesauce and oil.

  3. Shred the zucchini then pour into the flour mixture, and give in a good stir.

  4. Stir in the egg mixture.

  5. Spoon into a greased loaf pan, and then sprinkle with brown sugar.

  6. Bake for about an hour, or until a toothpick inserted in the center comes out clean
