Cooks Country zucchini bread with nuts and raisins.

Recipe Ingredients for Zucchini Bread

2 pounds zucchini, shredded
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp allspice
1/2 tsp salt
1 cup sugar
1/4 cup yogurt
2 large eggs
1 tbsp lemon juice
3 tbsp grapeseed oil
3 tbsp butter, melted
3/4 cup raisins
3/4 cup pecans, toasted

Recipe Directions for Zucchini Bread

  1. Shred and squeeze zucchini. Mix dry ingredients (except sugar) in large bowl. Mix wet ingredients and sugar in medium bowl. Mix wet into dry and add fruit and nuts.

  2. Spray loaf pan with cooking spray and pour batter into pan. Bake at 375 for 45 to 55 min.
