Recipe Ingredients for Zucchini Bread

3/4 cup sugar
3/4 cup brown sugar
3 eggs
1/2 cup unsweetened applesauce
1/2 cup safflower oil
1 tbsp vanilla
2 cups zucchini
1 cup walnuts
3 cups flour
1 tbsp cinnamon
1 tsp salt
1 tsp baking powder
1 tsp baking soda

Recipe Directions for Zucchini Bread

  1. Beat together sugars, applesauce,eggs, oil, and vanilla.

  2. Add grated zucchini and walnuts.

  3. Sift remaining ingredients together and mix just to blend.

  4. Divide between two 8 x 4 loaf pans.

  5. Bake at 325 for one hour.
