Recipe Ingredients for Zucchini Bread

2 1/3 cups sugar
2/3 cups shortening
3 cups zucchini, shredded
2/3 cups water
2 tsp vanilla extract
4 eggs
3 1/3 cups flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp cloves
1/2 tsp baking powder

Recipe Directions for Zucchini Bread

  1. Preheat oven to 350. Grease bottoms only of loaf pans. Cream sugar and shortening in mixing bowl. Stir in zucchini, water, vanilla and eggs. Mis in remaining ingreadients. Poor into pans. Bake until wooden pick inserted comes out clean - 60 to 70 minutes. Cool completely before slicing.

  2. Tips: Wrap tightly and refrigerate up to 10 days. Freezes very well.
