Zucchini Bread Recipe

Original recipe from epicurious, but I changed a few ingredients to make it healthier.

Recipe Ingredients for Zucchini Bread

1 cup all purpose flour
1 cup whole wheat flour
1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cups sugar
1/4 cup olive oil
1/2 cup yogurt
2 large eggs
1 teaspoon vanilla extract
3 cups grated zucchini
1/2 cup walnuts, toasted,chopped

Recipe Directions for Zucchini Bread

  1. Preheat oven to 350F.

  2. Butter and flour 9x5x3-inch loaf pan.

  3. Sift first 5 ingredients into medium bowl. Beat sugar, oil, eggs,yogurt and vanilla to blend in large bowl.

  4. Mix in zucchini . Add dry ingredients and walnuts and stir well.

  5. Transfer batter to prepared pan.

  6. Bake until tester inserted into center comes out clean, about 1 hour 20 minutes. Cool bread in pan on rack 15 minutes.

  7. Cut around bread to loosen. Turn out onto rack and cool completely.

  8. (Can be prepared 1 day ahead. Wrap in foil and let stand at room temperature.)
