Recipe Ingredients for Zucchini Bread

3 eggs
2 cups sugar
1 cup vegetable oil
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp salt (I don't use it)
1 tsp vanilla extract or bean
2 cups shredded zucchini
3 cups flour
0.33 cup dates or nuts
1/4 cup pineapple
1/4 cup walnuts

Recipe Directions for Zucchini Bread

  1. Preheat oven to 350*.

  2. In a mixing bowl add the first 8 ingredients together, beat on low for 30 secs, or until smooth.

  3. With a wooden spoon add in flour one cup at a time.

  4. Add the rest of the ingredients on at a time, and fold in with spoon.

  5. Put into 2 greased (spray crisco) bread pans. I like to make one bread and then the rest muffins!

  6. Bake at 350 for 60-70 mins. I found it only took 40-50mins, but the recipe my mom gave me said 60-70 mins.

  7. Cool and enjoy.
