This is a very moist quick bread recipe. Also good with pumpkin. Just change spices from cinnamon and nutmeg to 5 tsp ground allspice or pumpkin pie spice. Then omit the nuts and chocolate chips. This pumpkin bread recipe is from verybestbaking.com.

Recipe Ingredients for Zucchini Bread

2 cups flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup zucchini, shredded
1 cup brown sugar
1/2 cup apple juice
2 large eggs
2 tbsp vegetable oil
1 tsp vanilla extract
1/2 cup pecans, chopped
1 cup semisweet chocolate chips

Recipe Directions for Zucchini Bread

  1. Grease 9x5" loaf pan.

  2. Combine flour, spices, baking powder, baking soda and salt in medium bowl. Combine squash, sugar, juice, eggs, oil and vanilla in a large bowl; stir well. Stir in flour mixture just until moistened. Spoon into prepared pan.

  3. Bake for 60 min or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes; remove to wire rack to cool completely.
