Makes 15 servings



Best made with young zucchini; drain excess liquid after shredding veggies. Can be varied by adding more cloves and ginger too. Also could add a streusel topping (not included here.) This recipe makes a cake-like zucchini bread.

Recipe Ingredients for Zucchini Bread

3 Eggs
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
2 cups white sugar
3 cups grated zucchini
2 teaspoons vanilla extract
3 cups all purpose flour
3 teaspoons ground cinnamon
1 dash of cloves
1 teaspoon baking soda
1/2 teaspoon baking powder

Recipe Directions for Zucchini Bread

  1. Preheat oven to 350 degrees F. Spray pans with cooking spray.

  2. In large bowl beat eggs until light and frothy. Mix in oil and applesauce. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder in separate bowl; stir with wire whisk to blend and break up clumps. Stir into egg mixture. Pour into pans.

  3. Bake at 350 until golden brown or done. Bake time depends upon pan. 13x9 pan may take 30-40 minutes; bundt/tube pan 50 minutes.
