Zucchini Bread Recipe

Makes 16 servings



Modified from Cook's Country. They used lemon juice and plain yogurt instead of sour cream and allspice and cinnamon instead of pumpkin pie spice.

Recipe Ingredients for Zucchini Bread

1 lb zucchini
1 c flour
1 t baking soda
1 t baking powder
2 t pumpkin pie spice
1/2 t table salt
1 c sugar
1/4 c sour cream
2 eggs
6 T unsalted butter

Recipe Directions for Zucchini Bread

  1. Preheat oven to 375 (385) and spray loaf pan

  2. Shred zucchini; wring out in dish towel and set aside.

  3. Melt and cool butter

  4. Sift dry ingredients into one bowl

  5. Cream butter, sugar, sour cream and egg in another

  6. Combine all into large bowl with scraper just until flour disappears.

  7. Pour into pan

  8. Bake 50-60 min or until pick comes out with just a few crumbs. Wait and slice into 8 even pieces then cut once long ways down center for 16 pieces. 3 points each.
