Favorite zucchini bread recipe from B&B cookbook.

Recipe Ingredients for Zucchini Bread/Muffins

2 cups white sugar
3 eggs, beaten
1 cup vegetable oil
2 cups zucchini, grated
3 cups all purpose flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3/4 tsp. nutmeg
1 tsp. vanilla extract
1 cup golden raisins (coat in flour)

Recipe Directions for Zucchini Bread/Muffins

  1. Heat oven to 350.

  2. Mix ingredients in order listed. Do not over mix.

  3. Pour batter into 2 greased and floured loaf pans.

  4. Bake for approximately 1 hour at 350 degrees. Makes 2 loaves of bread. Let cool before removing from pan.

  5. For muffins, line 24 muffin cups with paperliners. Fill and bake for about 18 minutes, until pick inserted in center comes out clean.
