Recipe Ingredients for Zucchini Bread Lite

160 grams SPLENDA Sugar Blend for Baking
125 grams Sugars, Granulated
4 large egg Eggland's Best Egg
3 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
2 teaspoon Baking Powder
0.25 teaspoon Baking Soda
3 tsp Cinnamon, Ground
0.5 tsp Kosher Salt
2 tsp Vanilla Extract
8 oz Crushed Pineapple
0.5 cup Vegetable Oil, Canola
0.75 cup Organics Applesauce Unsweetened
15 oz Squash, Summer, Zucchini, Includes Skin
90 grams Montmorency Dried Tart Cherries
75 grams Raisins, Golden Seedless
72 grams Pecans, Dry Roasted

Recipe Directions for Zucchini Bread Lite

  1. Chop nuts and dried fruit.

  2. Grate zucchini.

  3. Combine dry ingredients, minus sugar.

  4. Drain pineapple.

  5. Beat eggs until light and frothy.

  6. Gradually add sugar.

  7. Add oil, applesauce, and pineapple.

  8. Add dry ingredients gradually -- don't over mix.

  9. Fold in zucchini, then nuts and dried fruit.

  10. Spray 1 large and 3 mini loaf pans with baking spray.

  11. Divide batter among pans.

  12. Bake at 350; 1 hour for large pan, less for small pans.
