Recipe Ingredients for Zucchini Bread (diabetic)

3 tbsp Extra Virgin Olive Oil
1 cup No Calorie Sweetener-splenda
3/4 cup Applesauce
4 large Egg, White
3 cup grated Zucchini
3 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 tbsp Cinnamon, Ground
1 tsp Baking Soda
1 teaspoon Baking Powder
1/2 cup chopped Walnuts
2 tsp Vanilla Extract

Recipe Directions for Zucchini Bread (diabetic)

Blend oil, Splenda and applesauce. beat egg whites into mixture. Grade zucchini into a sperate bowl and fold beatened egg mixture into zucchini. Stir dry ingredients;: add to zucchini mixture. Mix well. Pour batter into greased 8 - 4 inch loaf pan. Bake at 350 degrees for approximately 50 - 60 minutes or until tester comes out clean
