Recipe Ingredients for Zucchini Bran Muffins

1 cup apple, peeled chopped
1/2 t salt
1 cup zucchini, shredded
1 t cinnamon
1/2 cup maple syrup
2 t orange zest
1/2 cup plain nonfat yogurt
2 cups Bran, oat
1/4 cup canola oil
2 t baking powder
2 egg whites

Recipe Directions for Zucchini Bran Muffins

  1. Preheat oven to 400F

  2. Whisk syrup, yogurt, oil, and egg whites together.

  3. Separately combine salt, cinnamon, zest, bran, and baking powder.

  4. Fold the wet ingredients into the dry mixture.

  5. Add the fruit at the end. Fill muffin tins full and bake until cooked through, about 20 min.
