Recipe Ingredients for Zucchini Boats

2 lbs. zucchini
1 large onion, chopped
4 oz mushrooms, chopped
1 cup bread crumbs
1/2 cup
1/2 cup grated Parmesan cheese
1 tsp oregano
1 tsp basil
3 tbs olive oil
1/2 tsp salt
3 cloves garlic, mashed

Recipe Directions for Zucchini Boats

  1. Slice zucchini in half lengthwise.

  2. Scoop the halves hollow with a spoon, leaving about 1/4" of the flesh attached to the skin.

  3. Chop the scooped-out zucchini, the onion, the mushrooms.

  4. Put olive oil into a non-stick frying pan and saute all the vegetables until tender, about 15 minutes.

  5. Add mayonnaise and bread crumbs, spices and garlic and half the grated cheese.

  6. Cook a few more minutes until blended.

  7. Fill the zucchini boats with the vegetable mixture.

  8. Sprinkle with the remaining cheese and bake in a 350 degree oven for about half an hour, or until the zucchini shells are tender. Serve
