Recipe Ingredients for Zucchini Boats

2 medium Zucchini (about 8 inches)
3/4 lbs. Ground Turkey
1 small Onion, chopped
1/2 c. Mushrooms
1/2 c. Sweet Red Pepper, chopped
1/2 c. Green Pepper, chopped
1 c. (4 ounces) shredded Cheddar Cheese, divided
2 tbsp. Ketchup
1 Salt and pepper to taste

Recipe Directions for Zucchini Boats

  1. Trim the ends of zucchini.

  2. Cut in half lengthwise; scoop out pulp, leaving a 1/2-in. shell.

  3. When scooping out the pulp for Zucchini Boats, a teaspoon is just the right size.

  4. Use your food processor or blender to finely chop the pulp quickly.

  5. In a skillet, cook beef, zucchini pulp, onion, mushrooms and peppers over medium heat until meat is no longer pink; drain.

  6. Remove from the heat. add 1/2 cup cheese, ketchup, salt and pepper; mix well.

  7. Spoon into the zucchini shells.

  8. Place in a greased 13-in. x 9-in. baking dish.

  9. Sprinkle with remaining cheese.

  10. Bake, uncovered, at 350 for 25-30 minutes or until zucchini is tender.
