Recipe Ingredients for ZUCCHINI BOATS

4 medium zucchini
1 cup long grain rice, cooked
1 medium yellow onion, chopped
1 garlic clove, chopped
1/4 cup egg substitute, beaten
2 tablespoons olive oil
1/2 pound lean ground beef(ground round)
1/2 cup bread crumbs
2 cups canned spaghetti sauce
3 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons parmesan cheese, grated

Recipe Directions for ZUCCHINI BOATS

  1. Split zucchini lengthwise, scoop out seeds.

  2. Saute ground Beef, onion, garlic, dill, and parsley in olive oil.

  3. Remove From heat.

  4. Add cooked rice, beaten egg, 1/4 c bread crumbs and mix well.

  5. Fill zucchini with mixture and place in a baking dish. Cover with spaghetti sauce, sprinkle cheese and remaining bread crumbs on top.

  6. Cover and bake at 350 for approx 45 minutes, until zucchini is tender but firm.
