A hearty one-dish meal with lots of fiber, and very little fat.

Recipe Ingredients for Zucchini, Black Beans, and Rice.

2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1.3 cup Diced Tomatoes, No Salt Added
5 tbsp chopped Onions
1/2 cup Black Beans
0.5 cup Rice, White, Medium-grain, Cooked
0.5 serving ( 3 oz ) Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
1 pepper Green Chilies

Recipe Directions for Zucchini, Black Beans, and Rice.

Brown hamburger meat, drain and set aside. Saute chopped onion, pepper, and zucchini until soft. Add back in the hamburger and can of tomatoes, beans, and cooked rice. Add salt and pepper to taste and simmer, covered for about 10 minutes until heated through.
