A delicious side dish to serve with fajitas or other Mexican dishes.

Recipe Ingredients for Zucchini & Black Bean Saute

1 t. olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 pound zucchini, quartered and sliced
14 oz canned diced tomatoes
1 T chili powder
1 t. cumin
1/2 t. coriander
14 oz beans, black cooked, canned, and rinsed
1/2 cup corn kernels
1/2 c. water
1/2 t. salt

Recipe Directions for Zucchini & Black Bean Saute

  1. Heat oil in a pan over medium heat. Add the onion and garlic and saute for 3 minutes until onion is soft.

  2. Add the zucchini and cook until it is softened. It will release water in the pan, but keep cooking until the water is evaporated and the zucchini is dry.

  3. Add the spices and cook for a minute until they are fragrant.

  4. Add the canned tomatoes, rinsed beans, corn kernels, and water.

  5. Bring the mixture to a boil, then cover, reduce heat and cook for 5 to 10 minutes to combine the flavors.
