Southwestern inspired bean and rice skillet

Recipe Ingredients for Zucchini, Black Bean & Rice Skillet

1 tbsp Vegetable Oil, Canola
1.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.5 cup, chopped Peppers, Sweet, Green
15 oz Black Beans Drained and Rinsed
15 oz Tomatoes Diced
0.75 cup (8 fl oz) Water
1 cup dry Instant Rice
0.5 cup, shredded Cheddar Cheese

Recipe Directions for Zucchini, Black Bean & Rice Skillet

  1. Heat oil in large skillet over medium heat. Add zucchini and bell pepper; cook 5 minutes, stirring occasionally. Add beans, undrained tomatoes and water. Increase heat and bring to a boil.

  2. Add rice; stir well. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle with cheese.
