1 cup zucchini, finely chopped
1/2 cup black beans
2 tsp olive oil
1 tsp cumin
1/4 cup shredded cheddar cheese
2 tortillas, whole-wheat
2 tbsp salsa

Recipe Directions for Zucchini and Black Bean Quesadilla

  1. Saute zucchini, oil, beans and cumin

  2. Place bean mixture and cheese on tortilla

  3. Fold tortilla in half and cook in pan for three minutes on each side.
