Absolutely delicious way to use up your zucchini from the garden.

Recipe Ingredients for Zucchini Bisque Soup

1 medium onion, diced
1/4 cup butter or margarine
2 1/2 cups shredded zucchini
2 1/2 cups chicken broth
1/2 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
1 cup half and half

Recipe Directions for Zucchini Bisque Soup

Saute onions in butter until golden in stock pot or pan. Pour in chicken broth and zucchini, stir, cover and simmer for 20 minutes. Add in seasonings and transfer to blender and puree. Return to pot and add half and half and heat all the way through.
