Recipe Ingredients for Zucchini & Basil Pesto

8 oz pasta
16 oz zucchini
1/2 tsp salt (sea salt)
1/4 cup fresh basil, shredded and packed tightly
1 tbls olive oil
3 cloves garlic
1/4 tsp pepper

Recipe Directions for Zucchini & Basil Pesto

  1. Start water for pasta and cook per package directions

  2. Grate zucchini into a mixing bowl. Toss with sea salt, mixing well. Let mixture sit for 10 minutes as you prepare other ingredients. Pick up zucchini by the handful and squeeze tightly to extract as much water as possible.

  3. Toss squeezed zucchini with basil.

  4. Heat oil and saute garlic over moderate heat. When garlic sizzles, add zucchini and basil, saute 5-7 minutes until zucchini begins to turn golden.

  5. Spoon zucchini mixture over cooked pasta and sprinkle with fresh ground pepper.
