Great way to use up the extra zucchini from the garden (make sure you remove the seeds). Everyone will be saying how good the apple bars are - you can't tell the difference.

Recipe Ingredients for Zucchini Bars

8 cups zucchini - peeled, de-seeded, and sliced
2/3 cup lemon juice
1 cup sugar
1 tblsp cinnamon
1/2 tsp nutmeg
4 cups flour
1/2 cup sugar
1 1/2 cups butter

Recipe Directions for Zucchini Bars

  1. Preheat the oven to 375 degrees.

  2. Boil the sliced zucchini in the lemon juice until tender, add the sugar and spices.

  3. Mix the flour and sugar, and cut in the chilled butter until mixture resembles course crumbs.

  4. Pat half the mixture in the bottom of a 10x14 pan.

  5. Add the zucchini mixture, then sprinkle the rest of the crumb mixture over the top.

  6. Bake 35 to 40 minutes or until top is golden. Serve hot or cold
