Recipe Ingredients for Zucchini Banana Muffins

1/2 c apple sauce
1 egg
2 tbsp brown sugar
2 bananas
2 zucchini
1/2 c millet flour
1/4 c quinoa
1/4 c soy flour
1/4 c flour
1/4 c rice flour
1/2 c cornmeal
1 1/2 tsp cinnamon
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Recipe Directions for Zucchini Banana Muffins

Combine apple sauce, egg, and sugar. Mash and grate zucchini and add to applesauce mixture. Add cornmeal and other flours. Mix till well incorporated. Add spices, baking soda, and baking powder. Divide evenly between greased muffin tins. Bake at 350 degrees till golden brown.
