A wonderful vegetable side dish that can be served with any type of meatball, chicken, or roast.

Recipe Ingredients for Zucchini Bake

1 cup pieces Mushrooms
1 potato large (3" to 4-1/4" dia) Potato, Baked, Flesh And Skin
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Onions
4 slice (1 oz) Swiss Cheese
2 tbsp Olive Oil

Recipe Directions for Zucchini Bake

Chop raw vegetables (use baked large potato to shorten cooking time) with a sprinkle of olive oil, salt and pepper. Place four slices of swiss cheese on top and bake until vegs. are tender. 375 for 45 min.
