Zucchini Bake Recipe

I usually eat this as a main course with a slice of really hearty whole grain bread, a green salad, and fresh fruit. But, it can also be served as a side dish. I'm a vegetarian, but I've been told it goes well with roasted salmon.

Recipe Ingredients for Zucchini Bake

4 medium zucchinis
1 tbsp olive oil, divided
1 cup onions, chopped
4 Italian tomatoes, chopped
1/4 cup fresh basil leaves, chopped
1/8 cup fresh Italian parsley, chopped
1/2 cup part skim ricotta cheese

Recipe Directions for Zucchini Bake

  1. Saute the onions in 2 tsp of the olive oil until the onions are translucent. Add the tomatoes and cook until they are soft. Add the herbs and cook for another 2 or 3 minutes until the sauce is thick and rich. Add salt and pepper to taste.

  2. Trim the ends from the zucchinis and slice them lengthwise into approximately 1/4 inch slices.

  3. Brush a baking sheet with the additional 2 tsp of olive oil, and arrange the zucchini slices on the tray so that they don't overlap. Roast the zucchinis in a 500 degree oven until they're soft and starting to brown (approx 10-15 minutes). Remove the zucchini from the oven and allow to cool.

  4. Put a very small amount of the sauce in the bottom of an 8" x 8" baking pan, just enough to prevent sticking.

  5. Add a layer of zucchini and spread the ricotta over the top. Cover with 1/2 of the sauce. Add another layer of zucchini and cover with the rest of the sauce.

  6. Bake for 15 minutes in a 350 degree oven.
